Vegan “Franzbrötchen”

As you know, one of our major activities throughout the year is the Running Dinner, an event that combines our most favorite activities: Food and bringing people together. As unusual times call for unusual measures, the Online Echo is still bringing all of us together through food, especially because spending a lot of time in the house has lead to some awsome culinary discoveries. In this section, we have collected some of our favorite recipes for you to try out while we look forward to trying out your own recipes as well. Read at your own risk! ;-)

The Ingredients:

  • Dough
    • 500g flour
    • 70g sugar
    • ¼ teaspoon salt
    • 1 package of dry yeast
    • 250 ml lukewarm plant milk
    • 60 ml (taste-neutral) oil
  • Filling
    • 150g sugar
    • 2 teaspoom cinnamon
    • 60 ml (taste-neutral) oil

Instructions:

  1. Preheat the oven to 175 °C upper/lower heat, or 160 °C air circulation.
  2. Give all ingredients for the dough into a bowl.
  3. Mix the dough for 5 minutes with the kneading hooks of the cooking machine. Alternatively, mix the dough for 10 minutes with your hands.
    Cover the dough with a towel and let it sit for 30- 60 minutes at a warm place until the dough noticeably grew bigger.
  4. Pour flour onto a surface. Take the dough out of the bowl and knead it on the surface. Now shape the dough into a large rectangle (70x25cm)
  5. Mix all ingredients for the filling and spread the mixture onto the dough with a spoon or brush.
  6. Roll the dough up starting at the longer side.
  7. Use a sharp knife to cut the roll into 12 “trapeziums”. You need to cut the dough diagonal in changing directions ( / \ / \ / \ )
  8. Now you must lay the pieces along their long side and push down with the round handle of for example a wooden spoon or any other kitchen utensil.
  9. Place the pieces on a baking sheet and wait for 15 minutes until they grew a little bigger. Before putting them in the oven, cover them in plant milk.
  10. Bake the pieces for approximately 20 -25 minutes.
